What about elm? We salvaged some elm beams when our old (pre 1900) barn was dismantled. It's beautiful wood, very tight grained. It is written that because so few elm trees survived Dutch Elm Disease, it is a wood that many have not worked, but it was used in furniture seats because it was a wood that did not splinter or split. Have you ever tried turning elm into lace bobbins?
